    This year, like the year before, went by so fast. The Covid situation and the mental toll it takes make us feel more stressed and anxious during these uncertain times. To say I am glad 2021 comes to an end is an understatement. I cannot wait to toast this year goodbye and make the new year a great one. With lots of stuff I have planned for the blog, my baby, a.k.a this blog, turning one in February and hopefully some travelling to visit friends, I am excited for the new year to roll in.

    To ring in the new year I created a sparkling cocktail, perfect for this special occasion. This Pomegranate Mimosa is fruity, floral and super easy to assemble. Hello, Pomegranate Mimosa! I am taking the classic cocktail, made with orange juice and sparkling wine, for a delicious spin this season. Made with fresh pomegranates, a splash of Lillet Rosé and sparkling wine, it is the perfect drink to ring in the New Year.

    Tips for making this Pomegranate Mimosa

    • If you don’t have fresh pomegranates, use store-bought pomegranate juice. Just be sure to look for organic products with no added sugar to keep the cocktail balanced.
    • Instead of sparkling wine, you can also use champagne if you’re feeling fancy or prosecco, making for a slightly sweeter drink.
    • When assembling the cocktail, add the pomegranate seeds, Lillet liquor and pomegranate juice first and add the champagne as the last step to awaken the bubbles and create a wow-effect when making it in front of guests.

    Ingredients
      

    • 40 ml Lillet Rosé (1.3 oz)
    • 1 pomegranate
    • 200 ml sparkling wine (6.8 oz)

    Garnish

    • rosemary sprigs

    Instructions
     

    • Cut the pomegranate in half, squeeze out the juice and remove the seeds.
    • Measure Lillet Rosé, pomegranate juice and divide into two champagne glasses or coupes.
    • Fill up with sparkling wine, garnish with a sprig of rosemary and serve.
