    I love soups because you can get a nourishing meal in a short time without a ton of ingredients. The best part? These soup recipes are not only creamy and rich, but also vegan and low-carb. You won’t believe it, but all these soups do without adding heavy cream and clock in at under 300 calories. So these soups are a healthy but filling treat, perfect for a light lunch or dinner.

    Soups are also great for meal-prepping because they keep well when stored in an airtight container in the fridge or freezer. When I prepare soups, I always make a bigger batch to have a bowl ready on stressful days.
