    Let’s fudge it out! With this deliciously healthy 2 ingredient fudge. You can prep this no-cook recipe in just a few minutes and let the freezer do the rest. The best part? This sweet treat is sugar-free, dairy-free, gluten-free and vegan.

    Many of the fudge recipes I see are made with frosting, next to using nut butter. While this might be a delicious choice, one piece of fudge becomes a heavy load of sugar and calories. So I thought about an easy fudge recipe that will satisfy your creamy and sweet cravings but with a healthy twist. Born was this 2 ingredient fudge recipe.

    • Diet-friendly – This peanut butter fudge is not only delicious, but also fits into a healthy lifestyle. It is rich in healthy fats and sugar-free, dairy-free, gluten-free, keto-friendly and naturally vegan.
    • No-cook – Not only does this recipe do with just two ingredients, but you also don’t need a stovetop or oven.
    • One bowl – You only need a bowl and a whisk or spoon to combine the ingredients. The freezer does the rest.
    • Easy to make – This is probably the easiest recipe on the blog to date because it is whipped together in a bowl in seconds and then put in the freezer.

    Ingredients

    • Peanut butter – I used all-natural, unsalted and smooth peanut butter in this recipe.
    • Coconut oil (refined) – The coconut oil firms up the peanut butter when cooled. I used refined coconut oil for this recipe to avoid diluting the peanut butter taste with a coconut flavour.
    • Sea salt (optional) – Sprinkle over some sea salt before eating the fudge if you like.

    Instructions

    Melt the coconut oil in the microwave or on the stove if solid.

    Mix the peanut butter and coconut oil in a bowl with a whisk until well combined.

    Transfer the mixture to a small baking pan or container.

    Place in the freezer and freeze for about an hour or until firm. Remove the fudge from the freezer, cut it into 12 squares and serve.

    Tips and substitutions

    • Use refined coconut oil – It is neutral flavour and won't take away from the peanut butter taste.
    • Keep in the freezer – This fudge melts fast, so take it out just a few minutes before eating and put the fudge pieces into the freezer again.
    • Add another texture – Like it crunchy? Add some chopped peanuts before freezing the fudge.

    Top tip

    Sprinkle the fudge with some sea salt flakes before serving for the ultimate peanut butter indulgence.

    Recipe FAQs

    Is this 2 ingredient fudge healthy?

    Of course, it depends on what you perceive as healthy. But this recipe is definitely a healthier version of the classic fudge. It is rich in healthy fats and plant-based protein. Though it is still a treat, it should be eaten in moderation.

    Can I use other nut butter in this recipe?

    I did not personally try it, but I think this recipe would also work with almond, cashew, or hazelnut butter.

    Can I swap the coconut oil?

    You can also make this fudge with cocoa butter to keep it dairy free and vegan. I would not recommend using plant-based butter or margarine as it is not strong enough in texture to firm up the fudge.

    Can I add other ingredients?

    Add chopped nuts, vanilla extract or other ingredients to personalize it to your liking.

    How do I store this fudge?

    Keep the fudge pieces in an airtight container and store them in the freezer for up to 3 months.

    • 250 g natural peanut butter (1 cup)
    • 4 tablespoon coconut oil
    • flaky sea salt (optional)

    Instructions
