- Peanut butter – I used all-natural, unsalted and smooth peanut butter in this recipe.
- Coconut oil (refined) – The coconut oil firms up the peanut butter when cooled. I used refined coconut oil for this recipe to avoid diluting the peanut butter taste with a coconut flavour.
- Sea salt (optional) – Sprinkle over some sea salt before eating the fudge if you like.

Instructions
Melt the coconut oil in the microwave or on the stove if solid.
Pour the melted coconut into a bowl with peanut butter.
Mix the peanut butter and coconut oil in a bowl with a whisk until well combined.
Transfer the mixture to a small baking pan or container.
Place in the freezer and freeze for about an hour or until firm. Remove the fudge from the freezer, cut it into 12 squares and serve.

Of course, it depends on what you perceive as healthy. But this recipe is definitely a healthier version of the classic fudge. It is rich in healthy fats and plant-based protein. Though it is still a treat, it should be eaten in moderation.
I did not personally try it, but I think this recipe would also work with almond, cashew, or hazelnut butter.
You can also make this fudge with cocoa butter to keep it dairy free and vegan. I would not recommend using plant-based butter or margarine as it is not strong enough in texture to firm up the fudge.
Add chopped nuts, vanilla extract or other ingredients to personalize it to your liking.
Keep the fudge pieces in an airtight container and store them in the freezer for up to 3 months.
