    Delicious, nourishing and easy! This Crunchy Berry and Yoghurt Parfait is the healthy breakfast that keeps on giving. Change the fruits up to your liking and add additional toppings like chia seeds, flax seeds or nuts to make this your own.

    This easy to make and delicious breakfast has been my regular first meal of the day for a long time now and with good reason. I was on the hunt for a healthy but delicious breakfast I wanted to eat over and over again without getting bored of it. When I developed my nourishing and no-fail Morning Glory Granola, the combination with fruits and yoghurt was a winner that stuck.

    The fruity breakfast treat comes with healthy ingredients, combines different textures to keep it exciting and is customizable. Use fruits according to season and liking, and mix multiple fruits together. Also, add other nourishing toppings like seeds (Hello, chia and flaxseed!) and coconut chips, cacao nibs, and nuts.

    Why is this Crunchy Berry and Yoghurt Parfait so healthy?

    The combination of the ingredients makes this easy and quick breakfast the perfect staple in a balanced meal plan. Here is the ingredient breakdown:

    • Yoghurt: As a base for this breakfast, I used plain yoghurt. It is high in protein comes with a ton of vitamins and minerals. Moreover, the probiotics in yoghurt promote gut health and support the immune system.
    • Fruit: This part comes with endless options because you can change the fruits according to your liking, season and just what you have on hand. Every fruit comes with nutrient benefits, making it a delicious and healthy addition.
    • Granola: Since making this nourishing granola recipe, I haven’t bought granola in stores. It comes with complex carbs, healthy fats and is refined sugar-free. In this case, it adds a delicious nutty crunch to this yoghurt parfait.

    Tips for making this recipe

    • Mash half of the fruits and stir them into the yoghurt for a more intense flavour.
    • To make this breakfast vegan, use soy, coconut yoghurt or other plant-based options.
    • The granola used in this recipe contains honey, but you can make it vegan easily. Instead of honey use agave or maple syrup to create an entirely plant-based breakfast.
    • Put the granola in just before you eat to ensure it stays crunchy.

    Ingredients
      

    • 275 g yoghurt (1 ½ cups) or plant-based option
    • 125 g berries (1 cup)
    • 4 tablespoon granola (see recipe notes)

    Instructions
     

    • Mash half the berries with a fork.
    • Layer yoghurt, mashed fruit and granola in two glasses. Top with berries and granola, and add other toppings of choice if you like and serve.
