Sparkling Cucumber Mint Lemonade

Ingredients

  • ½ medium cucumber
  • 1 lime
  • handful of mint leaves
  • 2 teaspoon agave syrup
  • 800 ml sparkling water (3 ½ cups)

Instructions

  • Peel and chop the cucumber and squeeze out the lime.
  • In a blender, combine the peeled and chopped cucumber with the juice of one lime and agave syrup. Blend until you get a smooth puree
  • Add the mint leaves to the puree and blend briefly to incorporate the mint flavor. Avoid over-blending to prevent the mint from becoming bitter. For a smoother texture, strain the mixture through a fine mesh sieve.
  • Fill glasses with ice cubes. Pour the cucumber mixture into each glass, filling it with about one-third. Top each glass with sparkling water and serve.

Notes

  • Chill the ingredients – For the most refreshing experience, chill the cucumbers, limes, and sparkling water before mixing. Also, add ice cubes for the drink to keep it cool on hot summer days.
  • Sweetener options – You can use other natural sweeteners like honey or maple syrup. Adjust the quantity to taste.
  • Sparkling or still? – For a still version of the lemonade, use plain water instead of sparkling water.
  • Try other herbs – Substitute the mint with basil or thyme for a different herbaceous note in the lemonade.
