Almond Quinoa Granola Bars

These vegan and balanced Almond Quinoa Granola Bars are a delicious breakfast or snack to eat on the go. Loaded with almond butter, oat sand puffed quinoa and drizzled with dark chocolate. Snack on!

Ingredients

  • 200 g rolled oats (2 cups)
  • 20 g puffed quinoa (½ cup) 1
  • 150 g almond butter (½ cup)
  • 4 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • 30 g dark chocolate (1 oz) melted
  • sea salt

Instructions

  • Preheat the oven to 175°C (350°F)and line a 20x20cm (8x8”) baking pan with parchment paper.
  • In a bowl, mix rolled oats, quinoa pops and a pinch of sea salt. Add almond butter, maple syrup and vanilla extract. Stir until well combined.
  • Transfer dough to the baking pan and flatten with a spoon or your fingers to form an even layer forms. Bake for about 15 minutes until golden.
  • Meanwhile, melt dark chocolate in a heat-resistant bowl over a pot of simmering water. Set aside
  • Take granola bar dough out of the oven and let cool. Cut in 10 bars and drizzle with the melted chocolate. Let the chocolate dry and enjoy.
  • If not eaten right away, store in an airtight container in a cool place for up to one week.
