These vegan and balanced Almond Quinoa Granola Bars are a delicious breakfast or snack to eat on the go. Loaded with almond butter, oat sand puffed quinoa and drizzled with dark chocolate. Snack on!

- 200 g rolled oats (2 cups)
- 20 g puffed quinoa (½ cup) 1
- 150 g almond butter (½ cup)
- 4 tablespoon maple syrup
- 1 teaspoon vanilla extract
Toppings
- 30 g dark chocolate (1 oz) melted
- sea salt
Preheat the oven to 175°C (350°F)and line a 20x20cm (8x8”) baking pan with parchment paper.
In a bowl, mix rolled oats, quinoa pops and a pinch of sea salt. Add almond butter, maple syrup and vanilla extract. Stir until well combined.
Transfer dough to the baking pan and flatten with a spoon or your fingers to form an even layer forms. Bake for about 15 minutes until golden.
Meanwhile, melt dark chocolate in a heat-resistant bowl over a pot of simmering water. Set aside
Take granola bar dough out of the oven and let cool. Cut in 10 bars and drizzle with the melted chocolate. Let the chocolate dry and enjoy.
If not eaten right away, store in an airtight container in a cool place for up to one week.
