Apple and Plum Crumble

This healthy apple and plum crumble is the ultimate comforting breakfast and dessert for fall. The best part? It is high in complex carbs and skips refined sugar for a deliciously healthy treat.

Ingredients

For the fruit layer

  • 5 plums
  • 1 apple
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup

For the crumble topping

  • 50 g rolled oats (½cup)
  • 30 g almond flour (¼ cup)
  • 2 tablespoon ground hazelnuts
  • 1 tablespoon sliced almonds
  • 3 tablespoon coconut oil melted
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 180ºC (~ 350ºF). Halve the plums and remove the pit. Core the apples, remove the kernels and chop them.
  • Put the plum and apple pieces into a small baking pan (10x20 cm). Sprinkle with cinnamon and vanilla extract. Set aside.
  • Mix the rolled oats, ground hazelnuts, sliced almonds, and cinnamon powder in a bowl. Add vanilla extract, coconut oil and maple syrup. Stir until well combined.
  • Scatter the topping over the plum and apple layer and sprinkle with more sliced almonds. Bake for about 20 minutes until the crust is golden.
  • Take out the oven and serve with yoghurt and a sprinkle of cinnamon.

Notes

  • Double the ingredients and use a bigger baking pan to make this plum and apple crumble for a crowd.
  • The crumble is best served right after making. Store leftovers in the fridge, but be aware that the crumble crust will not stay as crunchy as it is when taking it right out of the oven.
  • Serve with regular, Greek or plant-based yoghurt to add a creamy but healthy touch to this crispy dessert.
