For the meat
- 2 chicken breasts (about 400g)
- 2 tablespoon vegetable oil (e.g. canola oil, sunflower oil)
- 1 tablespoon ras el hanout (spice mix)
- 1 teaspoon harissa paste
- 1 teaspoon sweet paprika
- pinch of salt and pepper
For serving
- 4 medium tortilla wraps
- 1 cucumber
- ½ red onion
- tahini
- cilantro
Cut the chicken breast into bite-sized pieces. In a medium bowl, mix the harissa paste, ras el hanout, smoked paprika, salt, and pepper. Add the chicken and toss to coat evenly.
Heat a large skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan. When hot, add the marinated chicken and cook for about 5 minutes, turning halfway through.
To assemble, place a tortilla on a flat surface and spread a spoonful of tahini sauce on it. Add sliced red onion and cucumber, then add some cooked chicken. Roll up the wraps tightly, tucking in the sides as you go.
Serve the chicken tortilla wraps immediately, with extra tahini sauce on the side for dipping if desired. Enjoy!
- Marinate the chicken – To get the most flavor out of the harissa and spices, marinate the chicken in the mixture for at least 30 minutes or up to overnight before cooking.
- Warm the tortillas – Warm tortillas in a non-stick pan or on a skillet to make them soft and pliable. It will make them easier to roll up and less likely to tear.
- Serve with extra lime wedges – Squeeze fresh lime juice over the wraps just before serving. It adds a bright, citrusy flavor that complements the spices nicely.
