Harissa Chicken Tortilla Wraps

Ingredients

For the meat

  • 2 chicken breasts (about 400g)
  • 2 tablespoon vegetable oil (e.g. canola oil, sunflower oil)
  • 1 tablespoon ras el hanout (spice mix)
  • 1 teaspoon harissa paste
  • 1 teaspoon sweet paprika
  • pinch of salt and pepper

For serving

  • 4 medium tortilla wraps
  • 1 cucumber
  • ½ red onion
  • tahini
  • cilantro

Instructions

  • Cut the chicken breast into bite-sized pieces. In a medium bowl, mix the harissa paste, ras el hanout, smoked paprika, salt, and pepper. Add the chicken and toss to coat evenly.
  • Heat a large skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan. When hot, add the marinated chicken and cook for about 5 minutes, turning halfway through.
  • To assemble, place a tortilla on a flat surface and spread a spoonful of tahini sauce on it. Add sliced red onion and cucumber, then add some cooked chicken. Roll up the wraps tightly, tucking in the sides as you go.
  • Serve the chicken tortilla wraps immediately, with extra tahini sauce on the side for dipping if desired. Enjoy!

Notes

  • Marinate the chicken – To get the most flavor out of the harissa and spices, marinate the chicken in the mixture for at least 30 minutes or up to overnight before cooking.
  • Warm the tortillas – Warm tortillas in a non-stick pan or on a skillet to make them soft and pliable. It will make them easier to roll up and less likely to tear.
  • Serve with extra lime wedges – Squeeze fresh lime juice over the wraps just before serving. It adds a bright, citrusy flavor that complements the spices nicely.
