Healthy snack attack with these spicy and flavourful roasted Cashews for your late night savoury cravings.

Chipotle Rosemary Roasted Cashews

Bingeworthy and balanced snack

The best way to make watching TV even better? The right snacks to go with whatever I’m binging. But sadly, most of the savoury snacks are usually full of simple carbs and lack of nutrients. Not really what I’m looking for in a balanced snack. And right there, nuts come to the rescue.

Nuts are rich in healthy fats and pack a bunch of nutrients to nourish the body. As a good protein source, rich in copper and magnesium, they support your brain and bone health. The best part? It only takes 15 minutes to make this bingeworthy snack which will satisfy your savoury cravings in no time. Winner!

Tips for making this Smoky Chipotle Roasted Cashews

  • Use raw unsalted nuts as a base to coat with flavours instead of already processed or seasoned ones.
  • Don’t disturb or overpower the flavour of the spices by using a vegetable oil that has a strong taste of its own. I usually use a light-tasting vegetable oil, like canola or sunflower oil, for that matter.
  • If you don’t have chipotle chili powder on hand you can substitute for other chili powders of your choice. Remember though, that the nuts won’t have that smoky flavour, which the chipotle chile is known for.
  • Don’t over-bake the cashews, otherwise the spices will turn bitter.
  • After taking the nuts out of the oven, let them cool for about half an hour for a crunchy treat. They will have a slightly soft texture when eaten warm.

Ingredients

  • 300 g raw unsalted cashews (2 cups)
  • 2 tbsp vegetable oil (e.g. sunflower oil, canola oil)
  • 1 tsp sweet paprika powder
  • 1 tsp chipotle chili powder
  • 1 tbsp fresh rosemary (chopped)
  • 1 tsp salt

Instructions

  • Preheat the oven to 160°C (320°F) and line a baking tray with baking paper.
  • In a bowl mix together oil, sweet paprika powder, chipotle chili powder, chopped rosemary, and salt to create a paste. Add the cashews and stir until the nuts are well coated in the marinade.
  • Distribute the marinated cashew nuts evenly on the baking tray, making sure they don't overlap. Roast for about 8 to 10 minutes until slightly browned.
  • Remove from the oven and let cool for at least half an hour. Store in an airtight container for up to one month.

Notes

  • Don’t disturb or overpower the flavour of the spices by using a vegetable oil that has a strong taste of its own. Use a light-tasting vegetable oil like canola or sunflower for that matter.
