Smoked Salmon Salad with Herb Vinaigrette

Ingredients

For the salad

  • 300 g smoked salmon (10oz) cut
  • 1 cucumber sliced

For the herb vinaigrette

  • 50 ml olive oil (1/4 cup) extra virgin
  • 10 g mixed herbs (1/4 cup chopped) (parsley, chives, dill)
  • 1/2 lemon
  • salt and pepper to taste

Instructions

  • For the vinaigrette chop parsley, chives and dill. Mix in a sealable jar with olive oil, and freshly squeezed lemon juice. Season with salt and pepper. Give it a good shake and set aside.
  • Slice cucumbers, cut smoked salmon and arrange on plates. Drizzle with the vinaigrette and serve with whole wheat bread or baguette.
