It might be September already, but I am not letting go of summer yet. So I am still utilizing all the seasonal fruit to create delicious dishes and drinks. Especially when turned into a refreshing drink for hot Summer or Fall days.

This time, I’m giving one of my favourite teas a fruity update. As I’m not a coffee drinker, tea is my fuel to get through the day. In the warmer season, I also like to turn my favourite warm beverage into a refreshing hydrator. A fruity iced tea with a slightly floral flavour, due to the green jasmine tea and the infusion of peaches.

Tips for making this summer refresher

This Peachy Jasmine Iced Tea is easy to prepare. Here are some tips to get the best taste:

  • Don’t use boiling hot water when pouring over the tea bags. It will make the tea taste bitter. Let the water cool down a little before steeping to get the best flavour.
  • Watch the steeping time when using green jasmine tea. Don’t steep in hot water for more than 3 minutes to avoid the tea turning bitter.
  • Stir in the lemon juice and agave syrup while the tea is still hot. The syrup can dissolve properly. Also, the lemon aroma will be more intense.
  • Add the cut peaches after the tea is cooled completely. Otherwise, you may end up with peach pulp in the glass when serving.
  • Don’t throw the peaches away after infusing in the tea. Eat them as a healthy and flavourful snack to avoid food waste and get all the nourishing benefits.

Ingredients
  

  • 4 green jasmine tea bags
  • 1/2 lemon
  • 2 peaches
  • 1 tsp agave syrup
  • 1 l water (4 cups)

  • mint leaves

Instructions
 

  • Put tea bags in a teapot. Boil 1l (4 cups / 34oz) water in an electric water cooker or on the stove. Let cool down for a couple of seconds and pour over tea bags.
  • Let the tea steep for 2-3 minutes and remove the tea bags. Meanwhile, squeeze out the half lemon.
  • Transfer tea into a pitcher. Add the lemon juice along with the agave syrup while still warm and stir. Set aside and let cool completely.
  • Wash peaches, halve with a knife and remove pits. Cut and add to the tea.
  • Let the iced tea infuse in the fridge for about an hour or more. The longer you let it sit, the more intense the peach flavour will be.
  • Add ice cubes to 4 glasses. Pour over ice tea, garnish with mint leaves if you like and enjoy your flavourful and healthy refresher.
