I’m not too much of a snack person during the day, but I love a quick breakfast or evening snack after dinner. But most of them are loaded with sugar and full of simple carbs. When I started to try some healthier snack bars you can buy, I wasn’t too impressed with the taste.

So the time has finally come to make up my own simple snack bar recipe, and it truly delivers. It is made with good-for-you ingredients, comes with a slight caramel flavour and silky dark chocolate drizzle. Are you convinced yet? Scroll down for some tips and the easy recipe.

What you need for this recipe

Only six ingredients and a drizzle of dark chocolate are needed to whip up this delicious recipe. Here is what you need:

  • Rolled oats – The balanced grain are a true staple for balanced baking dishes and act as a base for these granola bars.
  • Almond butter – Delivering some healthy fats, almond butter adds a nutty flavour. I used it here to hold the dough together.
  • Puffed quinoa – These fun and balanced little balls are quinoa popped like popcorn. They add some crunch to the granola bars.
  • Maple syrup – Delivering a refined sugar-free sweetness, maple syrup adds a caramel flavour to the granola bars.
  • Vanilla extract – The ultimate baking ingredient 
  • Sea salt – When I bake sweet treats, I mostly add a pinch of salt to enhance the flavours of the other ingredients.
  • Dark chocolate – As a chocolate lover, I needed to top these granola bars with a drizzle of the dark version. It adds that rich flavour but is more nourishing than milk chocolate.

Tips for making these granola bars

These Almond Quinoa Granola Bars are easy to prepare and done in 25 minutes. Here are some helpful tips to get the best result:

  • Mix the dry ingredients first and then add the wet ingredients so everything 
  • I have not stated a specific measurement for the dark chocolate in this recipe. I used about 30g (1 oz) for the drizzle here. Use more or less to your liking but be aware that it changes the calorie intake.
  • If not eaten right away, store in an airtight container in a cool place for up to one week.

Ingredients
  

  • 200 g rolled oats (2 cups)
  • 20 g puffed quinoa (1/2 cup) 1
  • 150 g almond butter (1/2 cup)
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract

Toppings

  • 30 g dark chocolate (1 oz) melted
  • sea salt

Instructions
 

  • Preheat the oven to 175°C (350°F)and line a 20x20cm (8×8”) baking pan with parchment paper.
  • In a bowl, mix rolled oats, quinoa pops and a pinch of sea salt. Add almond butter, maple syrup and vanilla extract. Stir until well combined.
  • Transfer dough to the baking pan and flatten with a spoon or your fingers to form an even layer forms. Bake for about 15 minutes until golden.
  • Meanwhile, melt dark chocolate in a heat-resistant bowl over a pot of simmering water. Set aside
  • Take granola bar dough out of the oven and let cool. Cut in 10 bars and drizzle with the melted chocolate. Let the chocolate dry and enjoy.
  • If not eaten right away, store in an airtight container in a cool place for up to one week.
