Breakfast is probably my favourite meal of the day. I love to indulge in a lengthy brunch on the weekend. But during the week I’m trying to keep it healthy with some meals that keep me full until lunch and don’t take up a lot of time preparing. I usually rotate between these three breakfast options to start the day on a healthy and satisfying note.
This is my go-to healthy breakfast. Especially when berries are in season and I can buy them locally. Just combine some plain yogurt or Greek yogurt if you prefer, some berries (e.g. strawberries, raspberries, blueberries), put in a bowl and sprinkle with granola. One of my favourite two foods I have to admit are bread and eggs. I know I know bread is not so good for the waistline but if you stick to the whole grain option and limit yourself to 1-2 slices you can indulge without the guilt. Just scramble 1 to 2 eggs and put on bread. Garnish with spring onions and some chives for extra flavour.
If you’re a sweet tooth than this breakfast option is your partner in crime. It gives you all the satisfaction of a decadent chocolate dessert but without the guilt. I love to enjoy it right away for a warm breakfast, especially in fall and winter. Find the recipe here.
