Healthy Homemade Granola

During my trip through the US a few months ago I really fell in love with Granola. The variety in the states is endless and I love that there are so many healthy options. A yogurt berry parfait topped off with granola is a breakfast option I love and the perfect healthy start into the day. But since I’m back trying to find healthy and flavourful granola here in Vienna, I got frustrated really quickly. The ones I liked were full of sugar and unhealthy ingredients and the healthier options lacked in tastiness. After browsing through a few granola recipes, I decided to whip up my own version including my favourite healthy ingredients. This easy homemade granola is not only delicious (I could literally just eat it out of the jar) but also saves some money on the store bought stuff. And since I’m doing it myself, I know exactly what’s in there and don’t have to worry about the ingredients. Perfect to start of this year on a healthy note. Scroll down for recipe.

Healthy Homemade Granola

What you need:

250g (2 cups) rolled oats

100g (½ cup) grated hazelnuts

2 tbsp sliced almonds

4 tbsp coconut oil (melted)

4 tbsp honey

½ tsp vanilla exctract

½ tsp cinnamon

Preheat the oven to 160C/325F. Measure oats, hazelnuts and almonds and put in a bowl. Combine melted coconut oil, honey, vanilla and cinnamon and pour over the dry ingredients. Stir well with a spoon until all the dry ingredients are covered. Spread out on a baking tray with the spoon and bake for 20-25 minutes until golden brown. Take it out and let it cool for about an hour. When it’s cooled off and crunchy, break granola into little pieces and store in a sealable jar. Drizzle over your favourite yogurt and fruits and enjoy your delicious breakfast!
